Chicory
Roasted chicory root is used as a coffee substitute (usually called "surrogate") or as an ingredient put in the coffee.
Chicory coffee
Since the 19th century, the ground and roasted roots of chicory have been turned into caffeine-free drinks with a somewhat bitter taste similar to coffee. In the French period, around 1800, this chicory coffee or peek coffee had become popular in the Netherlands. Chicory was widely grown and dried in the Friese Wouden, especially in the municipality of Dantumadeel. In the years of war and crisis, especially from 1940 to 1945, this surrogate coffee was drunk on a large scale due to a lack of real coffee, but the stimulating effect of caffeine was missing. A little 'chicory' was also often added to real coffee as a flavor enhancer.
