Buisman aroma, also called Buisman roasted sugar or coffee syrup, is a product of the Buisman company. It is a coffee additive consisting of roasted, caramelized corn syrup and molasses. It is used to improve the taste of coffee.
A small amount of Buisman is added to the coffee during brewing. For a long time 'Buisman' was a generic name for burnt sugar on the Dutch consumer market.
In times of coffee and tea scarcity, such as during the continental system instituted by Napoleon, coffee chicory was a widely used substitute. When coffee was widely available again, chicory continued to be used as an additive because coffee was expensive and people were used to the taste.
A flavour enhancing additive has been found in coffee syrup. This product made coffee spicier and darker, so that it appeared stronger and less coffee beans could be used.
