Speculaas mold - Cookie mold
Cookie molds were cut by the bakers. These so-called cookie boards have a cut-out image with which cookies could be produced.
Wood was used to produce a cookie board. A cookie of a fixed volume had to be cut into this because the cookies had to have a fixed weight. The basic shape was first cut to get the volume needed, after which was continued with the finer work, which meant hardly any extra volume.
A number of logical requirements were set for the wood that could be used, such as workability, strength and, in addition, the wood must be sealed. Because pine contains a relatively large amount of resin, for example, it could not be used, because that taste would then be absorbed. For example, ash, teak, and walnut could be used very well.
